On Padcrash, there are the four large screens at the middle of the map. I'm told that there are videos playing on that screen.  But they are not showing for me. I've tried in both the Windows and OS X versions of the game, but they do not show. Is there some config variable that needs to be changed in order to enable them?

Yes, reload the game.
If that doesn't help, your pk3s might be corrupted. At least I don't know any other reason why the video shouldn't be shown..
